Things I Love From A to Z

I discovered this fabulous post from Gala Darling’s iCiNG and it inspired me to create an A to Z list of my own. I highly recommend everyone do one too! It’s a great way to create positive thoughts, feelings and energy.

A is for… avocados.

B is for… blue. The blue sky, blueberries, blue jays & blue jeans.

C is for… coconut. Coconut oil, coconut water, coconut butter & coconut milk.

D is for… dogs. “A dog doesn’t care if you’re rich or poor, big or small, young or old. E is for… essential oils. Lavender, tea tree, neroli, vanilla & rose.

F is for… family & friends.

H is for… hummus. Spread some Raw Zucchini Avocado Hummus on your sandwich or use as a dip for veggies and crackers.

I is for… ice cream. Raw Banana Ice Cream is AMAZING.

J is for… Jennifer. That’s meeeeee!

L is for… love. love. love.

O is for… orange juice. Freshly squeezed.

P is for… pasta.

Coconut Sugar Lemonade

This crowd-pleasing summer drink tastes like a combination of iced tea and lemonade with a hint of caramel. The magical ingredient is Palm Sugar, made from the flower nectar of coconut palms.


COCONUT SUGAR LEMONADE

  • 3/4 – 1 cup Palm Sugar
  • 2 freshly squeezed lemons
  • 5 cups water
  • 1 cup blueberries

In a pitcher, add water, palm sugar and freshly squeezed lemon juice. Stir. Then add cup of blueberries.

Let chill in fridge or serve right away on ice.

Raw Vegan Chocolate Truffles

RAW VEGAN CHOCOLATE TRUFFLES

1/3 cup Raw Cacao Powder
1 tsp Raw Cacao Butter melted (optional)
1-2 tbsp Raw Coconut Butter
1 cup pecans or cashews or walnuts
1 cup pitted dates
1 pinch Celtic Sea Salt
splash of vanilla extract
(optional) 1/2 tsp of maple syrup

Firstly, process nuts until crumbs. Add cacao powder, dates and butters, followed by maple syrup, into food processor. Process the mixture until smooth and form into a ball. Roll into little balls and roll them in coconut, cacao powder or crushed nuts. Leave in freezer for 20 minutes to set.


Oooo, these truffles are cool, fudgy treats of goodness! I’ve coated them in some lightly salted sunflower and pumpkin seeds.
