RAW VEGAN CHOCOLATE TRUFFLES
1/3 cup Raw Cacao Powder
1 tsp Raw Cacao Butter melted (optional)
1-2 tbsp Raw Coconut Butter
1 cup pecans or cashews or walnuts
1 cup pitted dates
1 pinch Celtic Sea Salt
splash of vanilla extract
(optional) 1/2 tsp of maple syrup
Firstly, process nuts until crumbs. Add cacao powder, dates and butters, followed by maple syrup, into food processor. Process the mixture until smooth and form into a ball. Roll into little balls and roll them in coconut, cacao powder or crushed nuts. Leave in freezer for 20 minutes to set.
Oooo, these truffles are cool, fudgy treats of goodness! I’ve coated them in some lightly salted sunflower and pumpkin seeds.
This recipe is from Katrine Volynsky’s Raw Chocolate Bliss Class in Vancouver.

Mmmm the truffles look way good. I think you could also modify the recipe to include all sorts of different flavours.

Hi – I just made these and they are DELICIOUS!!! Just for clarification, though – was that 1 to 2 tablespoons of coconut butter? Thanks so much

William — Yes, I refer to these as life changing too! Healthy AND delicious – now that’s a real treat!
Susan — I am so glad to hear you like them! Yes, 1 to 2 tablespoons of coconut butter. I’ve actually been out of coconut butter for a while now and using 1 tablespoon of coconut oil instead and it works perfectly as well.

There are delicious as a treat, made with rich intense natural foods, but should not be confused as “healthy” food as many are commenting on.
