This rice dish full of immune boosting ingredients makes a delightful winter meal.
HEALING RICE
Time: 20 minutes
Servings: 3-4
- 3 tbsp olive oil
- 2 cups cooked rice or quinoa (I used Rooster Brand Scented Rice)
- 1/2 sweet onion, finely chopped
- 3 cloves of garlic, finely diced
- 2 cups mushrooms, sliced
- 1 zucchini, diced
- 1 cup broccoli, chopped
- 2 handfuls of spinach, scrunched in hands
- 1/2 red pepper, sliced
- drizzle of agave
- 1 tsp cayenne powder
- 1 tbsp curry powder
- salt, to taste
- 1 avocado, cubed
- juice of 1/2 a lemon
In skillet, sauté onion and garlic in olive oil on medium heat until onions are tender. Add mushrooms, zucchini, broccoli, agave, curry powder and cayenne powder, cooking for an additional 3-5 minutes. Reduce heat, stir in cooked rice, spinach, and red peppers. Remove from heat and spoon rice mixture into bowl. Top with chunks of avocado, sprinkle of salt and squeeze of lemon juice.
