Veggie Fajitas

Easy & deeelicious.

VEGGIE FAJITA RECIPE
Time 15-20 minutes
Makes 4 tortillas

  • 3 tbsp olive oil
  • salt, to taste
  • 1/2 sweet onion, sliced
  • 1 cup of broccoli, chopped
  • 3 tomatoes, sliced
  • 1 zucchini, chopped
  • 1 tsp cumin
  • drizzle of agave or maple syrup
  • 1/4 cup walnuts, crushed
  • 1 avocado, cubed
  • salsa verde (I use President’s Choice Salsa Verde)
  • spinach tortilla shells, warmed

Sauté onion in olive oil in skillet on medium heat until tender.
Add broccoli, zucchini and tomatoes cooking for an additional 3 to 4 minutes.
Sprinkle salt and cumin.
Drizzle agave.
Remove from heat and throw in crushed walnuts and chunks of avocado.
Pack warm tortillas with veggie mixture and salsa verde.

My 5 Favourite Vegan Recipes

This year I really got adventurous in the kitchen, trying out recipes other than just pasta with tomato sauce and vegetables. Although pasta will remain my most classic dish of all time, it was fun getting a little experimental. I’ve made these dishes countless times because they’re simple, vegan and delicious. That is why these are my five most popular recipes of 2009!

1. I think one of the main reasons I stay slim (hard to believe considering the amount of food I eat) is because most of the desserts I eat are raw. The avocado gives the creaminess to this rich chocolatey pudding.

2. I wish this gorgeous dish was offered in every restaurant.

3. Another recipe with avocado, I can’t get enough! Can you blame me? This toasted sandwich is so quick and easy, it’s hard to believe how yummy it is.
