VEGGIE FAJITA RECIPE
Time 15-20 minutes
Makes 4 tortillas
- 3 tbsp olive oil
- salt, to taste
- 1/2 sweet onion, sliced
- 1 cup of broccoli, chopped
- 3 tomatoes, sliced
- 1 zucchini, chopped
- 1 tsp cumin
- drizzle of agave or maple syrup
- 1/4 cup walnuts, crushed
- 1 avocado, cubed
- salsa verde (I use President’s Choice Salsa Verde)
- spinach tortilla shells, warmed
Sauté onion in olive oil in skillet on medium heat until tender.
Add broccoli, zucchini and tomatoes cooking for an additional 3 to 4 minutes.
Sprinkle salt and cumin.
Drizzle agave.
Remove from heat and throw in crushed walnuts and chunks of avocado.
Pack warm tortillas with veggie mixture and salsa verde.
