I had a little leftover pasta, a ripe avocado and a juicy tomato that I ended up turning into a sensational sandwich!

TOASTED TOMATO, AVOCADO & PASTA SANDWICH RECIPE
- 2 slices of bread, toasted
- 1/2 tomato, sliced
- 1 avocado, mashed with a little olive oil and sprinkle of salt
- leftover linguine (sauteed in olive oil and garlic)
Top mashed avocado with sliced tomato and linguine on toasted bread. Deeelicious!
