I have some rice milk in the fridge right now! I haven’t tried that brand though. I will have to look into it. The eggplant and the rice recipes sound amazing!

One of my really good friends, who was already a vegetarian, recently discovered she’s allergic to milk, eggs, peanuts, and (here’s the kicker) soy…which is in a lot of vegan foods… she’s also a college student so doesn’t have access to a ton of cooking supplies…any food/shopping suggestions?

I eat soy products only a few times a year so tell her not to worry, there are lots of different options!
Here are some of my favourites…
Quinoa
Fajitas/Burritos – with veggies, black beans, salsa and guacamole
veggie rice & beans
For cheese ~ Daiya Vegan Cheese
portobello mushroom burgers
veggie chili
pasta with lots of vegetables
rice/almond/hemp milk
toasted veggie sandwiches – (I love mashed avocado, tomatoes, spinach w/ a sprinkle of salt and drizzle of olive oil.)
falafels wraps
avocado rolls

Will have to check out those links. I love rice milk and also recently changed my diet so it more… skin friendly
