A yummy way to enjoy quinoa for breakfast!
BLUEBERRY MAPLE QUINOA RECIPE
- 1 cup quinoa, rinsed
- 1 1/2 cups water
- 1 cup non-dairy milk (I used YÜ Basmati Vanilla Rice Milk)
- Generous drizzle of maple syrup
- 1 cup fresh blueberries
Cook quinoa in one and a half cups of water in a pot, bringing to a boil over high heat. Reduce heat to medium-low, cover and simmer 15-20 minutes or until water is absorbed.
Remove from heat and add non-dairy milk. Spoon quinoa into bowl. Then drizzle maple syrup on top and sprinkle with blueberries.
