Monday Supper :: Rice + Beans

Two years ago, I wouldn’t eat anything with beans in it. I gradually started to incorporate them into my diet for the added nutrition. (I started off ordering 1/2 the amount of beans in the Tommy Burrito.) Now, I enjoy rice + beans!

I’ve been making this basic veggie rice + beans dish a lot lately. (It also works well using quinoa instead of rice.) I dice up whatever veggies I have at the time.. I like tomatoes, mushrooms, zucchini, spinach and onions. I drizzle a little olive oil into a cast iron skillet (while the rice is cooking separately) and throw in the veggies and a can of Eden Organic Black Beans. Next, I sprinkle in some cumin, chili pepper, cayenne pepper, crushed red pepper flakes, a pinch of Himalayan salt and squirt of agave. Then I stir the cooked rice into the veggie medley…and it’s ready! And of course, I always top the dish off with big slices of avocado. :)
