These sound delish… except for the flour tortillas. Enchiladas are made with corn tortillas, otherwise, these are smothered burritos. Yeah, small culinary point possibly but still, it means a lot to someone who grew up in SoCal!
I WILL try them, just, not using flour tortillas as they turn hard and horrid when baked in the oven. (Which is possibly why the blogger didn’t show a photo of the baked version, only the unbaked, pre-oven version.)
Agree with Koko, sweet potatoes and black beans are the perfect combo! (use both in one of my favorite chili dishes!) Beautiful photo….will definitely give ‘em a try!

Wow, how wonderful! We are visiting our son this week who is just getting into the university routine. I’m going to make these along with your previously mentioned peanut butter chocolate chip cookies to take to him. It will give him a boost of real nourishing food to perhaps offset some of the not so healthy stuff he’s eating.
