These veggie & black bean tacos are as simple as it gets! They’re also absolutely delicious and one of the meals that I eat most often.
Lacinato kale (finely chopped), a handful of sliced mushrooms and baby spinach, tomato (chopped), 1/2 sweet onion (sliced), can of black beans (rinsed and drained), avocado, tortillas of choice
Sprinkles of red pepper flakes, chili powder, cayenne pepper, salt
Sauté (with grape seed oil or veggie broth) the chopped veggies and beans in skillet on medium heat. Add seasonings. Warm tortillas on oven rack.
Cook the veggies for a few minutes, then spoon the mixture on tortillas. Garnish with beautiful slices of avocado!
