I think veggie chili is one of the easiest and most delicious meals for fall. I added garlic, onions, zucchini, mushrooms and diced tomatoes to the kidney beans and tomato sauce. I seasoned the chili with dashes of chili powder, cumin, red pepper flakes and cayenne pepper. I tried adding a teaspoon of raw cacao powder and a drizzle of apple cider vinegar as well. Salt, to taste. A few pieces of fresh cilantro on top. Ah, perfection.
